The Boonies: a term coined by United States soldiers in the Philippines from the native "Bondoc", meaning mountain.

Boonie Foods pays homage to Chef Joseph Fontelera's Lola (grandmother) who's maiden name is Bondoc, and the many stories she and the others hailing from the bondoc carried with them from the Philippines.


Chef Joseph Fontelera

Chef Fontelera has been cooking professionally for well over 15 years. He has cooked in many elite kitchens, and has himself, earned the coveted Michelin Bib Gourmand award multiple consecutive years. However, it was his experiences as a child in the kitchen with his Lola that have had the most profound impact on him.

Joseph, (often "JOSEP'!!" by his family) would like to share those warm experiences and the vast complexity of Filipinx culture through Boonie Foods!
